I grew up with a Chicken Salad from a local deli in my hometown that I loved to put on bread as a sandwich. I wondered how this Avocado Chicken Salad would compare. It is very similar! And healthier! I haven't done much with avocados yet, but I think I will do more!
We doubled the recipe so it would last longer for lunches (and it was easier to measure out). I made my sandwich this afternoon with a toasted hoagie bun, the Avocado Chicken Salad, and tomato slice halves. Yum!!
